Cucumber Hummus

To use up all our extra cucumbers! Roommates: I made a whole tub in the fridge for you to enjoy – it’s a light, healthy snack that you can eat with the celery that is in the fridge too. 😉 more cucumber recipes to follow, as requested by Rachel.
INGREDIENTS
  • 2 cups Chickpeas or Garbanzo Beans (rinsed and drained from can or soaked and cooked dried chickpeas)
  • 2 springs fresh Dill (washed, stems removed)
  • ½ Cucumber (washed, skin on, roughly chopped)
  • ½ teaspoon Salt
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Olive Oil (or more , optional)
  • 2 tablespoons Tahini (Sesame Paste)
  • 1 small Garlic Clove
